No Bake Lemon Cheesecake

Summer isn’t over yet! If you liked our other no bake cheesecake recipe, you’re sure to love our no bake lemon cheesecake. Like the others this no bake cheesecake recipe is light, fluffy and easy to make too.

They’re great anytime, but on a hot summer day, they’re heavenly. Make one for this upcoming weekend. If you’re not a lemon fan, then try one of our other two cheesecake recipes. Enjoy!!

No Bake Cheesecake

Lite No Bake Cheesecake

Lemon No Bake Cheesecake

Ingredients
Filling Ingredients
  • 2 8 oz cream cheese – soft
  • ½ C sugar
  • 1 C sour cream
  • 2 tsp vanilla
  • Zest of one lemon
  • Juice of one lemon
  • 12 oz Cool Whip
Graham Cracker Crust Ingredients
  • 2 packages graham crackers (20 rectangles) crushed
  • 1 dash cinnamon
  • 1/3 cup sugar
  • 6 tbsp butter melted
Instructions
Filling Instructions
  1. Cream together cheese and sugar.  

  2. Blend in sour cream, vanilla, zest and lemon juice.
  3. Fold in whipped topping.
  4. Spoon into cooled 10” graham cracker crust (recipe follows).
  5. Chill til set (approximately 4 hours)
  6. Top with fresh fruit or can of favorite pie filling.

Graham Cracker Crust Instructions
  1. Mix all together.

  2. Press into 10” springform pan (I use the base of a drinking glass to press).
  3. Bake in warm oven 5 minutes.
  4. Cool completely before filling.
