Easy Slow Cooker Roast Beef Dinner

Does your family have busy schedules?  Is it a struggle finding time to make a good sit down dinner for the whole family?  Here’s the answer to your problem!  It’s an easy slow cooker roast beef dinner recipe that your family will love.  The best part of this recipe is it’s delicious and simple to make!!  I put the roast in frozen, yes frozen, before I go to work and when I get home, most of the dinner is done.  It’s great with both beef and pork roasts too.  This recipe is also great for those hot summer days when you don’t want to use the oven.

Slow Cookers are fairly inexpensive and can be used in so many different ways.  We have four different sizes and use them for anything from cooking roasts to baked beans.  The small one is perfect for keeping your favorite queso dip warm and serving it with tortilla chips.  Here are two links to the “Crock-Pot” slow cooker we use for this recipe.  Check out the current pricing at Homedepot and Walmart.

Slow Cooker Beef Roast
Ingredients
  • Beef Chuck Roast or pork shoulder
  • 1 large Onion sliced into wedges
  • ½ C Beef Broth
  • Salt
  • Pepper
  • 2 Cloves Garlic minced
  • 1 T Coffee ground
Instructions
  1. To start, place onion wedges on bottom of the slow cooker and pour in beef broth.
  2. Spray frozen roast with olive oil and sprinkle one side with salt & pepper and place face down on top of onions.
  3. Sprinkle top of roast with Salt & pepper, minced garlic (or garlic powdeand ground coffee.
  4. Set slow cooker on low and leave for 8-10 hours (4-5 hours on high).
  5. Remove roast to a plate and cover. Pour juice and onion mixture into pan (could strain off faand thicken. Ready to serve, enjoy!!
